Organic Soy Lemon Bars

1 c HODGSON MILL UNBLEACHED WHITE FLOUR
1/3 c HODGSON MILL ORGANIC SOY FLOUR
1/3 c sifted powdered sugar
1/2 tsp salt
8 Tbsp. firm butter
4 eggs
1 1/2 c granulated sugar
2 tsp. lemon peel
1/3 c lemon juice
1 tsp baking powder
1 Tbsp. HODGSON MILL UNBLEACHED WHITE FLOUR
1-2 Tbsp. sifted powdered sugar for topping

Preheat oven to 350 degrees F.

In a large bowl, blend together flours, powdered sugar and salt. Cut in butter with a knife or pastry blender until the mixture is crumbly. Press flour mixture into a lightly greased 13 x 9 x 2-inch baking pan. Bake at 350 degrees F for 10 minutes.

While the crust is baking, beat eggs and granulated sugar together until smooth. Add the remaining ingredients except for the 1-2 tablespoons of powdered sugar for the topping. Remove baked crust from the oven and pour egg-lemon mixture on top of the hot crust. Return the pan to the oven and bake it for an additional 18-20 minutes or until set.

Remove pan from the oven and dust with powdered sugar. Cool on a rack and cut into bars.
