Basic Better Gravies

 

6 Tbsp. Meat drippings                                             3 cups water

4 Tbsp. Hodgson Mill Pure Corn Starch             1¼ tsp. salt

¼ tsp. pepper

 

 

Blend drippings and corn starch over low heat until it is golden brown color, stirring constantly.  Gradually add water, salt, and pepper.  Heat to boiling over low direct heat and then boil gently 2 minutes, stirring constantly.  Yield 3 cups.  For cream gravy, use milk or cream in place of water.
