Gluten Free Quick Bread
1 c HODGSON MILL SOY FLOUR
2 c HODGSON MILL YELLOW CORN MEAL, PLAIN
1 c HODGSON MILL BROWN RICE FLOUR*
3 tsp baking powder
1 tsp salt
1/4 c honey
2 Tbsp. applesauce
2 1/2 c water
Mix flours, baking powder and salt in large bowl. Add honey, applesauce and water. Mix well (Should be like a cake batter. Add a little water if necessary.). Spoon batter into lightly oiled 9"x5" loaf pan. Bake for 1 hour at 350 degrees F until lightly browned.
Makes 1 loaf. Each loaf: 1815 calories; 28 g. dietary fiber; 372 g. carbohydrates; 96 g. protein; 12 g. fat; 0 g. saturated fat; 0 mg. cholesterol; 3569 mg. sodium.
