Pasta Omelet with Salsa
1 c egg substitute (Eggbeaters)
1 c cooked Hodgson Mill Pasta Veggie Rotini, Veggie Wagon Wheels, Veggie Radiatores, Veggie Bows, Whole Wheat Spirals, Whole Wheat Elbows, Whole Wheat Medium Shells, Whole Wheat Penne, Whole Wheat Bow Tie Pasta or Whole Wheat Radiatores
There are many variations with this recipe. You can use spaghetti sauce instead of salsa and sprinkle with low fat grated Parmesan cheese. This recipe is also delicious with shrimp, sliced tofu or chicken topping the pasta.
Spray a skillet with a non-stick spray and heat on medium. Pour in one cup egg substitute and when it starts to set a bit, sprinkle in your favorite Hodgson Mill pasta. Top with salsa and cover. When set, fold omelette over and serve.
