How is it made?
Corn kernels are gently ground between 2 pink granite stones. The whole grain is used; if we put in 1 pound of grain 1 pound of stone ground meal will result. Nothing is added and nothing is taken away.


Storage Recommendation
Dry product may be stored at room temperature, in refrigerator, or in freezer at least until the code date on the package.
Prepared product should be consumed within 1 week of preparation.

It is not advised to replace all the all-purpose flour in a recipe with this ingredient. For a stronger corn flavor and a denser, whole grain consistency, substitute 1/4 - 1/2 the total flour in the recipe for corn meal.

No, it is whole grain.

What is the difference between white and yellow corn?
There is no difference aside from color. They are two varieties of corn.


Is this a whole grain product?
Yes. The whole corn kernel is ground, none is sifted or separated away. 


What is cornmeal mush?
This is a Southern style porridge made from boiled cornmeal.

What is polenta?
The Italian version of mush.


Can I use this in a bread machine?
You can use it in part of the flour called for in bread recipes. For instance, if using a recipe that call for approx. 3-1/2 total flour, use 3 cups flour and only 1/2 cup corn meal. Mix flours and cornmeal well before using in recipe.

How do I make this self-rising?
Per 1 cup of cornmeal, add 3 Tbsp. All Purpose flour, 1 Tbsp. baking powder and ½ tsp. salt.

If I store my flour in the freezer, what do I do before using it in a recipe?
It is best to bring all ingredients to room temperature before use, unless otherwise specified in the recipe.


Why do ingredients need to be room temperature?
Cold ingredients may adversely affect the recipe performance. Yeast in particular is sensitive to warmth or cold. Butter and other solid fats are another set of ingredients that are affected by temperature and can affect the way a dough or batter can be blended.

Can I fry with this?
Yes. If used on meat, it may need to be dipped in egg or milk mixture first to get the corn meal to stick to the surface of the meat.

Is this bromated?
