  • Preheat oven to 350ºF.
     
  • Brown butter in a small saucepan. Melt it over medium heat, and keep cooking, swirling occasionally so it cooks evenly. Butter will foam, darken and small dark pieces form and fall to the bottom. When butter turns a deep brown color and smells nutty, remove from heat and pour immediately into an 8- or 9-in baking dish.
     
  • In a medium sized bowl, stir together the granulated sugar, flours, baking powder, cinnamon and milk. Pour over the browned butter – do not stir. Arrange peaches evenly on top of batter. Sprinkle with brown sugar.
     
  • Bake the cobbler in a 350ºF oven for 40-45 minutes or until deep golden brown. Serve warm or at room temperature with a scoop of vanilla ice cream. This cobbler tastes the best the day it’s made.
