Bread flour has higher protein content than all-purpose flour; it is made from harder, higher protein wheat.. Hodgson Mill Best for Bread flour ranges from 12.7 to 13.3 protein content.
 
 

Can I use this in place of all-purpose flour?  
Yes, if in a yeast bread type recipe. It may make cakes or cookies, or other tender baked goods, more chewy and tough.
 
 

What type of wheat is used to make flour?
It is made from 100% hard spring wheat.
 
 

Why are there enrichments in this flour?  
By law we are required to add certain nutrients back into flour for bread. 
 
 

Is this whole grain flour?  
No, the bran and germ are sifted and separated away.

 

Can I use this in a bread machine?  
Yes. It’s best to follow a recipe or a manual provided by your bread machine manufacturer. As a rule, use no more than 3-1/2 total cups of flour. (You may use only Best for Bread Flour if you want)
Add liquids first, then add dry ingredients, next add the fat, then add the Fast-Rise yeast last.

 

How do I adjust my bread recipes?
This flour can be used alone in bread recipes or in combination with other flour. It shouldn't require any adjustment when replacing all-purpose flour. Vital wheat gluten may be added for better performance in yeast breads. Per cup of flour, add One tsp. Hodgson Mill Vital Wheat Gluten.

 

How do I make this self-rising?
Per 1 cup of Best for Bread Flour, add 1-½ tsp. baking powder and ½ tsp. salt. 

 

Does this flour use ferrous sulfate in the enrichment?  
No, our Best for Bread flour is enriched but does not use ferrous sulfate.

 

Is the Folic Acid used in the Best for Bread flour synthetic or natural?
This enrichment’s folic acid is synthetic.

 

Is the flour bromated?
