Gluten free and delicious pancakes made with coconut flour.

  • 1/4 cup Hodgson Mill Coconut Flour-Gluten Free
  • 3 eggs
  • 2 Tbsp butter, melted
  • 1/3 cup milk
  • 1 Tbsp sugar
  • 1/8 tsp baking soda
  • 1/2 tsp vanilla extract
  • pinch of salt
  • non-stick cooking spray or butter, for greasing skillet


  • Heat skillet over medium heat. Beat together eggs, butter, milk, and sugar in large mixing bowl. Stir in baking soda, coconut flour, vanilla, and salt. Mix gently until combined. Spray skillet with cooking spray or add butter. Drop large spoonfuls of batter onto hot skillet and cook until browned on each side about 3-4 minutes for first side, 2-3 for second side.
