1-2 oz. smoked salmon, sliced (about the area of a deck of cards)
1/2 tsp. capers
chopped fresh dill
salt and pepper, to taste
Bring water, oat bran cereal, and salt to a boil over medium heat. Simmer 2-3 minutes, until you can see the bottom of pan exposed for a second or two when you drag spoon through. Turn off heat. Add cream cheese and stir until melted and cereal is creamy and light. Transfer cereal into serving bowl. Top as desired with smoked salmon, chopped red onion, capers and dill. Season to taste and enjoy hot.
Notes: This recipe makes one serving – adjust amounts above according to number of people to serve. If there are leftovers, transfer hot cereal immediately to a sealed container in fridge, where it will keeps 2-3 days. Store toppings separately.
