Preheat oven to 400°F. Grease a 9X9 square oven safe baking dish.
In large bowl combine almond flour, coconut flour, 1/4 tsp salt, baking powder, 1/2 tsp garlic powder, and xanthan gum. Stir well.
In a small bowl, combine warm water and honey stir until honey is dissolved. Add yeast, and set aside for 5 minutes. Yeast mixture should get bubbly.
To the flour mixture, add olive oil and yeast-water mixture stir well. Add beaten eggs, stir well.
Add 1/2 cup mozzarella and mix until dough is formed and cheese is distributed throughout. Pat dough evenly into baking dish by hand (moisten fingers with water to prevent dough sticking to fingers). Bake 15-17 minutes until the sides of the crust turn golden brown.
While bread is baking prepare topping.
Topping: In a small bowl combine butter, remaining garlic powder and remaining salt.
Brush topping mixture on hot bread, sprinkle with Italian seasoning and remaining mozzarella cheese.
Bake an additional 10 minutes or until cheese is melted. For a nice bubbly brown top broil for the last 3 minutes in the oven. Allow bread to stand for 5-10 minutes after you remove from oven before slicing.
