  • 1-1/4 cup Hodgson Mill Organic Oat Bran Flour
  • 3/4 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup butter, softened,(not melted)
  • 1/2 cup sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup peanut butter
  • 1 egg
  • 1 tsp. vanilla extract


  • Preheat oven to 375ºF. In a medium bowl stir together oat flour, baking powder, baking soda, and salt. In a large bowl, blend butter with sugars and peanut butter until smooth. Add egg and vanilla and beat until fluffy. Add dry ingredients to butter mixture and blend. Chill 30 minutes if a thicker cookie is desired. Drop by spoonful’s and place 1-inch apart on an ungreased cookie sheet. Mark with crisscross using the tines of a moistened fork dipped in sugar. Bake 8-10 minutes. Cool on wire racks.
