Fresh basil and tomato make this pasta dish both light and delicious. Add a salad and garlic bread for a perfect meal.

  • 1 16 oz pkg Hodgson Mill Whole Wheat Angel Hair
  • 2 Tbsp olive oil
  • 3 Tbsp garlic, minced
  • 3-4 cups grape tomatoes
  • 1 tsp salt, plus more for seasoning
  • 1 to 1-1/2 cups basil, loosely packed fresh, chopped, divided
  • 3/4 cup parmesan, grated, divided


  • Cook pasta according to package directions; reserve 2 cups starchy cooking water. Drain pasta and keep covered and warm.
  • While pasta cooks, heat a large skillet over medium heat. Add olive oil, and cook garlic until soft about 2 minutes. Adjust heat to medium-high and add tomatoes and salt, and cook 2 minutes. Add about 1/2 cup starchy cooking water. Bring mixture to a boil, reduce heat and simmer five minutes until tomatoes start to burst. Add drained pasta, half the chopped basil, and 1/2 cup Parmesan cheese, and stir until cheese is melted. Add more cooking liquid slowly if necessary.
  • Remove from heat. Garnish with more chopped basil and parmesan, season to taste and serve warm.
