How is it made? 
It is made by the fermentation of corn sugar with a microbe Xanthomonas campestris, which the name is derived from. It is used as a stabilizer, emulsifier and a thickener. It belongs in a group of food additives know as starches, gums, and gels.

Dry product may be stored at room temperature or in refrigerator at least until the code date on the package.

Xanthan Gum is a derivative of corn. No corn is detectable after processing is complete, but some who are allergic to corn may feel safer avoiding this product.

What is Xanthan Gum  used for? 
Xanthan Gum is a binder and stabilizer. It is a natural carbohydrate and it is used in conjunction with gluten free ingredients in baking gluten free breads, cakes and cookies. It is used to give the dough or batter a “stickiness” in place of gluten. It adds volume and viscosity to bread and other baked goods. It helps gluten free foods stick together, gives them structure and help baked product stay moist. It can also be used as an aid in thickening recipes.


How can I be sure it is Gluten Free?  
We are currently certified gluten free under the National Celiac Association and we are in the process of changing to the Gluten Free Certification Organization. Both certifications help us guarantee that our products are far under the legal FDA limit of 20ppm (parts per million) gluten. We use dedicated food contact surfaces, thorough cleanout processes and allergen swabs to check and prevent cross-contamination between ingredients.


How much do I use?
On the back of the pouch, you will find the following tips:
Add 1 tsp. per one cup of gluten free flour used in breads and pizza dough recipes. Add 1/2 tsp. per one cup of gluten free flour for cakes, muffins, and quick bread recipes. Add 1/2 tsp. (or less) per one cup of gluten free flour used in cookies and bar recipes.
