How is it made?
It is made by the fermentation of corn sugar with a microbe Xanthomonas campestris, which the name is derived from. It is used as a stabilizer, emulsifier and a thickener. It belongs in a group of food additives know as starches, gums, and gels.
Dry product may be stored at room temperature or in refrigerator at least until the code date on the package.

Very fine- powder, white or creamy yellow in color, odorless

Item is not ready to eat, it must be thoroughly cooked.
This gum is a baking aid, not chewing gum, DO NOT CHEW!
Used as an ingredient in baked goods, especially good for those on gluten free diet.
