How is it made? 

This yeast is grown on cane molasses. It is dried and becomes dormant, but it revives when it comes into contact with moisture and warm enough temperatures.


Storage Recommendation

Dry product may be stored at room temperature or in refrigerator at least until the code date on the package.

Is this brewer’s yeast?

No, brewer's yeast is not alive and is a byproduct of the brewing industry.


How much yeast is in this packet?

2 ½ tsp. or 8.75g or close to 1/4 oz. = 1 cube of fresh yeast


You have more yeast in your packet. Will it affect my recipe?

No. Use one packet for one packet. We formulated our yeast especially for use with whole grains, which tend to need more help rising. But it works perfectly fine for all-purpose flour recipes as well.


How is this different than other yeast?

Fast rise yeast is a different strain of yeast that is more potent than active yeast. It is typically used for bread machines. Fast Rise yeast does not have to be hydrated in water first. You may still proof it in warm water if you wish.


How do I store my yeast?

The refrigerator is the best place to store it. A cool dry cupboard away from light and heat is also a good choice.


How do I store my opened package of yeast?

You can fold over the unused package and store in the fridge or store in a glass jar.


Can I freeze yeast?

We do not recommend it because the cells are alive and freezing may fracture the cells.


Is it alright to add boiling water to the yeast?

No. Boiling water will kill the yeast. The perfect temperature for yeast is 95°F-110°F.


Is it alright to add cold water to the yeast?

No. Cold water will slow down the activity of the yeast. The perfect temperature for yeast is 95°F-110°F.

Are there any additives in this product?

Yes there are some processing aids in this yeast.

Sorbitan Monostearate is an emulsifier used in yeast manufacturing to aid in the drying process, it protects the yeast from excess drying and also aids in the re-hydration of the yeast cells. It is considered safe and actually can aid the body in fat absorption. Source of the Sorbitol in the Sorbitan Monostearate is unknown, however it is plant and may or may not be corn. Allergens are part of the protein structure of the organism, however the process used to produce Sorbitol eliminates the plant protein. Typical usage level ranges from 0.30%. to 0.70%.

Vitamin C (sometimes listed as Ascorbic Acid) - Actually adding the Vitamin C or Ascorbic Acid is a great thing. It really helps the rising. It creates an acidic environment for the yeast which helps it work better. It also acts as a preservative and deters mold and bacterial growth. With just a touch of Ascorbic Acid in your Artisan breads, the yeast will work longer and faster. French bakers add it to their French bread, baguette or boule recipes. It is the one allowed additive to bread dough in France.


Is the Sorbitan Monostearate corn based?

It can be. Suppliers might use 100% corn or 100% tapioca for a period of time and then might be using a mixture of corn and tapioca other times. If you have concerns about corn, it would be best to find a product that can definitely state that corn is not used.
